Abstract

L'invention concerne un procédé de ramollissement d'une protéine animale, qui consiste à imprégner la protéine animale d'un mélange liquide préparé par panachage, par 100 parties en poids de la protéine animale, de 3 à 12 parties en poids d'une solution saline, de 1 à 10 parties en poids d'une solution alcaline, et de 0,001 à 0,1 parties en poids d'une enzyme en poudre, afin de conférer à la protéine animale des fonctions de solubilisation de sels et de dégélification, et de provoquer une réaction enzymatique pouvant ramollir la protéine animale. L'invention concerne également des aliments contenant la protéine animale ramollie selon ce procédé, et des ramollissants contenant un sel en poudre, une poudre alcaline et une enzyme en poudre donnant respectivement les concentrations indiquées plus haut lorsqu'ils sont dissous dans un solvant approprié. Plus particulièrement, l'enzyme en poudre comprend un élément choisi parmi des protéases et des amylases, ou leur mélange. La papaïne, l'actinidine et la cucumisine figurent parmi les protéases préférées.
