Abstract

Un four a cassettes oblong est destine au traitement thermique et specialement pour rotir et/ou griller des produits de viande, en particulier des poulets, suspendus et passant au travers du four a cassettes. Ce four se compose d'une pluralite de cassettes, chacune d'elles etant formee de deux moities identiques (3, 4 de la Fig. 4) de sections verticales en forme de C, lesquelles moities sont separees vers le haut par une fente superieure (5) pour une broche de gril suspendue verticalement (6) passant au travers et vers le bas par une fente inferieure (7) qui contient une rainure d'egouttage (8). Les moities de cassettes (3, 4) sont pourvues sur leur surface superieure et inferieure de barres de coulissement (10, 15, 11, 16) s'etendant dans le sens longitudinal du four a cassettes et mobiles dans des barres de guidage montees de maniere rigide, en forme de rainure (12, 17, 13, 18). Chaque moitie de cassette (3, 4) comprend un passage d'air vertical (23, 24) avec une admission d'air vers le bas et une connexion d'evacuation (27, 28) reliee a un ventilateur vers le haut. La paroi (29, 30) le long de la fente superieure (5) est perforee pour aspirer la fumee et les odeurs de cuisson depuis la fente (5) vers le passage d'air (23, 24).
