Abstract
An oblong cassette-oven is intended for the heat treatment and especially for the roasting and/or grilling of meat products, particularly chickens, while they are suspended in and passed through the cassette-oven. Said oven is formed of a plurality of oven cassettes, each of which is formed of two identical cassette halves (3, 4 in Fig. 4) of C-shaped vertical cross-section, which halves upwardly are separated by an upper slit (5) for a vertically suspended grill spit (6) to pass therethrough and downwardly by a lower slit (7), which is filled by a drip groove (8). The cassette halves (3, 4) are provided on their lower and upper surface with slide bars (10, 15, 11, 16) extending in the longitudinal direction of the cassette-oven and movable in groove-shape rigidly mounted guide bars (12, 17, 13, 18). Each cassette half (3, 4) includes a vertical air passageway (23, 24) with air intake downwardly and fan evacuation connection (27, 28) connected to a an upwardly. The wall (29, 30) along the upper slit (5) is perforated for sucking in smoke and cooking smell from the slit (5) to the air passageway (23, 24).
Description
Oblong cassette-oven for heat treatment and especially roasting and/or grilling meat products, such as chickens
The present invention relates to an oblong cassette-oven for heat treating and especially for roasting and/or grilling meat products, such as poultry and particularly chickens, which cassette-oven comprises a plurality of oven cassettes attached one adjacent the other in a substantially straight line.
It is known to utilize for heat treatment a cassette-oven, the size of which can be established according to demand by using the necessary number of oven cassettes, each of which constitutes one unit and is stationary mounted. It is also known to utilize oblong ovens of tubular shape, through which the objects to be heat treated are transported in the longit udinal direction of the oven. In none of these cases it is possible to transport through the oven objects suspending in the oven from a conveyor above the oven, and in both cases inspection, cleaning and repair of the oven are troublesome and time-consuming operations. These inconveniencies are avoided in that according to the invention an oblong cassette-oven has been given the characterizing features defined in the attached claims. The invention is illustrated by an embodiment thereof shown in the accompanying drawings by way of example, in which drawings Fig. 1. is a schematic lateral view of a cassette-oven according to the invention,

Fig. 4 is a vertical cross-section of the oven cassette shown in Fig. 3.
The oblong cassette-oven shown in Figs. 1 and 2 is formed of a number of oven cassettes 1 and 1 with substantially identical structural design and of a stationary spray box 2 with internal spray nozzles. Said box is of no concern for the present invention.
Each oven cassette 1,1 in Figs. 3 and 4 is divided in the vertical central longitudinal plane into two identical halves, which in cross-section have the shape of a C and opposite, which cassette halves 3,4 are upwardly separated from one another by an upper slit 5 for allowing the passage therethrough of an electrically heated vertical grill spit 6 indicated by dash-dotted lines, when the spit suspended from a conveyor (not shown) is advanced in the longitudinal direction of said slit, and downwardly said cassette halves are separated from one another by a wider lower slit 7 to leave space for and be filled by a drip groove 8 with outlet 9, Fig. 1. The spray box 2, too, has in its roof a slit 5 connected to said slit 5. Each cassette half 3,4 is provided on its lower surface with a slide bar 10,11, which rest in a groove-shaped upwardly open guide bar 12,13, which lastmentioned bars are rigidly supported on trestles 14. The cassette halves 3,4 are also on their upper surface provided each with a slide bar 15,16 guided in groove-shaped downwardly open guide bars 17,18. All of the guide bars 12,13,17,18 have such a length as to extend a short distance beyond both ends outside the cassette-oven, as appears from Figs. 1 and 2, whereby it is possible to pull apart the oven cassettes 1,1' on the guide bars and from the spray box 2, so that the oven cassettes provide access to their interior. The cassette halves 3,4 comprise an inner wall 19,20, an outer casing 21,22 and an air passageway 23,24 therebetween. These passageways 23,24 include a lower air intake 25,26 and an upper evacuation connection 27,28 connected to a suction source (not shown). The wall portion 29,30 of the cassette halves along the upper slit 5 is perforated so that air intakes to the air passageways 23,24 are obtained. The inner walls 19,20 are covered with a reflecting surface coat, the rear surface of which simultaneously may have heat insulation against the walls 19,20, which carry infrared radiation tubes 31,32. In the oven cassettes 1 these tubes
emit short-wave radiation penetrating to the depth in, for example, chickens for roasting the same, and in the oven cassettes 1' said tubes, emit medium-wave radiation yielding good surface adsorption for grilling, for example, chickens. The effect supply in the oven cassettes 1 may be, for example, 6 kW/side and running meter, and in the oven cassettes 1' twice this value. On the outer surface of the cassette halves boxes 33,34 with electric conducting means to the IR-tubes 31,32 are located. At the ends of the cassette oven adjustable entrance and, respectively, exit sluices 35,36 are arranged. The oven cassettes 1,1' preferably are held together by clamping means attached in the longitudinal direction of the oven or between guide bars and said sluices.
The cassette-oven described is intended primarily for roast ing and grilling chickens, in such a manner, that on a plurality of spits 6 two chickens, for example, are pushed onto the lower portion of each spit and locked, that the spits susp ended from a conveyor at a spaced relationship of about 30 mm are advanced in the upper slits 5,5', and the chickens during their passage through the oven cassettes 1 are roasted by the short-wave infrared radiation and the heat-emitting spits 6, and in the spray box 2 the chickens are sprayed with a liquid mixture of oil and seasonings, and, finally, the chickens are grilled in the oven cassettes 1' by the medium-wave infrared radiation. The cassette-oven, of course, can be utilized for the heat treatment of any objects attached to suspension means capable to pass in the upper slits 5,5', by a suitable choice of the IR-tubes.
The cassette-oven according to the invention offers especially the advantages, that the oven cassettes 1,1' handily can be pulled apart from each other and from the spray box 2, so that the inside of each cassette half easily can be inspected, cleaned, repaired etc., and the IR-tubes simply can be exchanged. The oven cassettes 1,1' are cooled in that air is sucked in downwardly through the air intakes 25,26 and flows
through the air Dassageways 23,24 to the evacuation connections 27,28. Smoke and cooking smell are sucked in at the upper slit 5 through the perforations in the wall portions 29,30 along the slit and are prevented to enter the room about the cassette-oven. The IR-tubes and spits effect a rapid heat treatment,with reduced time consumption, for example, for roasting and grilling the chickens and of advantage for the tastefulness of the completely prepared chicken. Fat melting from the chickens is collected in the drip groove 8 and can be drained at the outlet 9. The drip groove easily can be cleaned in connection with oven cassettes being pulled apart.
The cassette-oven according to the invention can be modified especially as regards the number of cassettes in the oven and their structural design in detail. The spray box can be abandoned. The slide or guide bar of the cassette halves may consist of rollers. The cassette halves may abut each other at the lower slit. The drip groove then can stand above said slit. The cassette-oven can be designed for both roasting and grilling, or only for one of these operations. As meat product also roast beef and the like can be prepared.
Claims
1, An oblong cassette-oven for the heat treatment of object and especially for the roasting and/or grilling of meat products, such as poultry, chickens, roast beef etc., comprising a plurality of oven cassettes (1,1') attached one adjacent the other in a substantially straight row, c h a r a c t e r i z e d i n that the oven cassettes (1,1') are movable relative to each other, that each cassette in the vertical central long itudinal plane of the cassette-oven is divided into two inden ical cassette halves (3,4) of C-shaped vertical cross-section, which halves are separated upwardly by an upper slit (5) for the horizontal passage of a vertical grill spit (6) and downwardly by a lower slit (7), the vertical sides of which abut each other or the sides of a drip groove (8), and that the cassette halves (3,4) on their inside in known manner carry infrared radiation tubes (31,32) for roasting or grilling the meat product.

A cassette-oven as defined in claim 1, c h a r a c t e r i z e d i n that the cassette halves (3,4) on both their upper surface and lower surface are provided with a slide bar (10,15,11,16) extending in the longitudinal direction of the cassette-oven or with a row of rollers, which slide bars or roller rows are arranged movable in groove-shaped rigidly mounted guide bars (12,17,13,18).

A cassette-oven as defined in claim 1 or 2, c h a r a c t e r i z e d i n that each cassete half (3,4) between its inner and outer surface (19,21,20,22) is provided with an air passageway (23,24) with air intakes (25,26) at the lower portion of the cassette halves (3,4) and an evacuation connection (27,28) at the upper portion of said halves, and that the wall portion of the cassette halves (3,4) along the upper slit (5) by perforation is provided with air intakes to the air passageways (23,24).
4. A cassette-oven as defined in claim 3, c h a r a c t e r i z e d i n that the inner walls (19,20) of the cassette halves on their surfaces facing toward each other are covered with a heat insulating material, which is covered by a reflecting layer to the oven space.
