  • a frozen aerated confection comprising:
  • the frozen aerated confection comprises no more than 5 % w/w non-digestible mono- and/or di-saccharide
  • the non-digestible, non-laxative, mono- or di-saccharide may be allulose, also known as psicose, which is a low energy (0.2 KCal / g) monosaccharide and available commercially from Tate & Lyle as Dolcia Prima.
  • Unsuitable non-digestible, mono- or di-saccharides are sugar alcohols except erythritol. Whilst sugar alcohols as a group have a lower food energy than sucrose as they are not completely absorbed into the blood stream from the small intestines. However, with the exception of erythritol, their consumption can lead to bloating, diarrhoea and flatulence and thus the frozen aerated confection preferably excludes sugar alcohols with the exception of erythritol.

Abstract

La présente invention concerne une confiserie aérée congelée pauvre en calories. Dans un premier aspect, l'invention concerne une confiserie aérée congelée, la confiserie aérée congelée comprenant : (a) un mélange de polysaccharide non-digestible non-savoureux et de polysaccharide digestible avec une teneur en énergie totale ≤ 3,5 KCal/g ; (b) un mélange de mono- ou di-saccharide non-digestible non-laxatif et de mono- ou di-saccharide digestible ayant une teneur en énergie totale ≤ 3,5 KCal/g ; (c) 2-10, de préférence de 2-8, plus de préférence 2-5 % en poids de graisse ; (d) 0,5-2,5, de préférence 1-2 % en poids de protéine ; (e) 0,2-0,8, de préférence 0,2-0,5, plus de préférence 0,2-0,4 % en poids de stabilisant ; la confiserie aérée congelée ayant une teneur en énergie totale ≤ 200, de préférence ≤ 150, plus de préférence ≤ 120 KCal/100 g, la confiserie aérée congelée ayant une teneur en glace à -18 degrés centigrade de 38-55, de préférence 40-50, plus de préférence 43-47 %, la confiserie aérée congelée ne contenant pas plus de 5 % en poids mono- et/ou di-saccharide non-digestible, et la confiserie aérée congelée ne contenant pas plus de 15 % en poids de polysaccharide non-digestible.
