Abstract

La présente invention concerne un fromage déshydraté pouvant être obtenu en traitant du fromage ou du caillé au moyen d'un acide afin de réduire sa teneur en calcium, puis en le déshydratant, la durée de déshydratation nécessaire à l'obtention du fromage pouvant, ainsi, être fortement raccourcie. On peut, en outre, obtenir un fromage déshydraté à la texture homogène, souple, élastique et unique, au goût de fromage frais, agréablement acide et se conservant bien.
