yidE遺伝子の発現が増強するように改変された有機酸生産能を有する細菌あるいは細菌の処理物を、炭酸イオン、重炭酸イオン、または二酸化炭素ガスを含有する反応液中で有機原料に作用させることによって、有機酸を生成させ、該有機酸を採取することにより、有機酸を製造する。
