Abstract

　香味品質が改善され、オリの発生及び色調の変化の抑えられたトマト果汁含有アルコール飲料及びその製造方法を提供することを目的とする。以下の工程(a)～(c)：(a) トマト果汁を含む液を乳酸菌で発酵させて、液中の乳酸を増加させることを含む、乳酸発酵トマト液を製造する工程；(b) トマト果汁を酵素処理し、濾過することを含む、清澄トマト果汁を製造する工程；(c) 前記乳酸発酵トマト液、前記清澄トマト果汁及びアルコール混合する工程；を含み、所望により、以下の工程(d)：(d) 安定化リコピンを添加する工程；をさらに含む、トマト果汁含有アルコール飲料の製造方法を提供する。
