Abstract

On obtient des matériaux fonctionnels ayant un excellent effet thrombolytique, une fonction SOD et une fonction ACE en mettant en culture un bouillon de graines de haricots. On inocule ensuite le bouillon stérilisé é l'une des souches microbiennes TOYO-11 à 13 (Dépôt Nos FERM Bp-8011 à 8013) et on procède à une culture par agitation. Après centrifugation de la culture, le surnageant ainsi obtenu est utilisé comme matériau fonctionnel. Ces matériaux fonctionnels sont excellents dans l'activité de SOD (32, 7 à 37, 2 %), l'activité inhibitrice d'ACE (92,0 à 97, 2 %) et l'activité thrombolytique (25,0 FU/g ou plus) et présentent un goût et des propriétés (notamment la stringence) dans l'évaluation sensorielle comme le natto (total : 4 à 5).
