Abstract

L'invention concerne des enzymes désaturases, et plus spécialement des Δ9 désaturases animales, ainsi que l'utilisation des ces enzymes pour modifier la saturation des acides gras, notamment la saturation des acides gras de graines oléagineuses. L'invention concerne plus particulièrement l'enzyme désaturase palmitate FAT-5. L'invention concerne également des séquences d'acides nucléiques codant pour les Δ9 désaturases animales, y compris des séquences codant pour FAT-5.
