Abstract
Ce dispositif (2) à trancher la viande comprend une table (2) constituée d'un bâti (3) et d'une surface de table (4) et une machine à trancher (5) montée sur celle-ci et constituée d'un disque à trancher (6) sensiblement circulaire et susceptible d'être mis en rotation autour de l'axe de symétrie, ainsi que de moyens d'entraînement (10, 11) pour le disque à trancher (6). Cette machine à trancher (5) peut être retenue et bloquée au moyen d'un support (7) monté sur la table (2) et d'un bras pivotant assujetti au support. L'axe de rotation (13) du disque à trancher (6) se situe au-dessus de la surface de table (4), dans une direction presque parallèle à la surface de table (4). Le support (7) est assujetti à sa partie inférieure au côté postérieur (16) de la table (2) opposé à l'utilisateur (15). Le bras pivotant (8) de retenue de la machine (5) est monté à l'extrémité supérieure (7a) du support et s'étend au-dessus de la surface de table (4) vers le côté (17) où se tient l'utilisateur, parallèlement au plan du disque à trancher. Le bras pivotant (8) peut pivoter en hauteur et être bloqué en position afin d'ajuster l'angle d'attaque entre le disque à trancher (6) et la surface de table (4). Le disque à trancher (6) pénètre dans une fente (18) ou dans une rainure ménagée dans la surface de table (4).
