Abstract
L'invention concerne un polypeptide possédant une activité de β-galactosidase spécifique au xyloglucane et comprenant la séquence de restes d'acides aminés 34-857 de la séquence représentée dans la figure, ou un de ses équivalents fonctionnels, ainsi que des séquences nucléotidiques codant ledit polypeptide.
