LE ROY S. STARRETT, OF NEWBURYPORT, MASSACHUSETTS.
IMPROVED BUTTER-WORKER.
Specification forming part of Letters Patent No. 46,952, dated March 21, 1865.
To all whom it may concern.-
Be it known that 1, LE ROY S. STARRETT, of Newburyport, in the county of Essex and State of Massachusetts, have invented a new and Improved Butter-Worker; and I do hereby declare that the following is a full, clear, and exact description thereof, which will enable those skilled in the art to make and use the same, reference being had to the accompanying drawings, forming part of this specification, in which- Figure 1 is a plan or top view of my invention 5 Fig. 2, a side sectional view of the same, taken in the line a: 00, Fig. 1.

This invention relates to a new and improved butter-worker for expressing the buttermilk from butter; and it consists in the employment or use of an oblong box, provided at each side above its upper edge with a rail,
there is placed a shaft or bar having a lever attached, to which there is suspended a pressure-plate, all being arranged in such a manner as to admit of the work aforesaid being performed expeditiously and in a perfect manner.
A represents an oblong quadrilateral box, which may be constructed of wood, and of any suitable dimensions, and B B are two rails, which are secured to standards a at each side of the box, the rails being a short distance above the sides of the box, to admit of a space, b, between them to receive the ends of a shaft or bar, 0, which extends across the box at right angles with its sides. (See Fig. 1.)
The under sides of the rails B B are notched, as shown at e in Fig. 2, in order to prevent the shaft or bar 0 from slipping too readily underneath them, said notches forming what may be termed bearings for the bar 0 when a lever, D, attached to said bar is pressed downward. This lever D has a pendant, E, secured to it by a pivot, d, the lower end of said pendant having a flat board, F, attached to it, which extends across the box A. This board F constitutes the plunger, by which the butter is compressed or worked.
The operation is as follows: The box A is placed within a vessel of water, its upper end being a little submerged, so that the water will enter said box. The butter being placed in box A,the operator grasps the lever'D and moves it up and down, and at the same time back and forth, so that the plunger F will Work along the entire length of the box, the rails B B forming bearings for the shaft or bar 0 during the downward movement of lever D and the pressure of the bar F on the butter.
By this simple arrangement the buttermilk may be worked out of the butter with the greatest facility and without breaking the grain of the same and rendering it oily. The buttermilk, as the butter is compressed or squeezed under the action of the plunger F, mingles with the water in the vessel in which the box A placed.
I claim as new and desire to secure by Letters Patent- The box A, provided with the rails B B, in combination with] the shaft or bar 0, with lever D attached, and the latter having the plunger F connected to it, all being arranged to operate in the manner substantially as and for the purpose herein set forth.
