Abstract

Edible prods. for humans are prepd. by >=1 ultrafiltration of lactoserum. The prod. is used in fods, esp. as a sweetener e.g. in confectionery. It is also compatible with bread-making unlike lactoserum itself. The protein/sugar prod. avoids sepn. of the constituents. As a sweetener it is less susceptible to crystallisation than sugar and is easy to handle.
