Abstract
L'invention concerne la préparation d'un produit alimentaire texturé contenant de l'azote protéique. On soumet une matière particulaire amylacée, contenant de l'azote, à une gélatinisation partielle en présence d'eau, pour obtenir un substrat dont les particules ont moins de 3 mm; on inocule au moins une souche de champignon amylolytique et l'on fait incuber jusqu'à ce que le réseau des filaments du mycélium enserre les particules du substrat ou de leurs produits de dégradation, puis l'on dénature (par cuisson dans l'eau) le produit obtenu Ce produit texturé peut servir à remplacer de la viande hachée dans des plats ou aliments composés.
