In the Opera program files directory, right-click on launcher.exe to create a new shortcut and place it on your desktop. Then, on the desktop, rename it what you want. Then, right-click on the shortcut, goto properties and then the "shortcut" tab. On that tab, modify the target to add the --user-data-dir command-line switch.
For example:
"C:\Program Files (X86)\Opera\launcher.exe" "--user-data-dir=C:\Users\yourusername\Opera2"
(I personally have a "My Program Files" folder in "C:\Users\myusername", so I'd use "C:\Users\myusername\My Program Files\Opera2" for example.)
You can create as many shortcuts as you want with each using a different profile folder.

As an alternative for now, note that you can enable the "Custom user sites for browser sidebar" flag at the URL

for example).You can't customize the icon for it in the sidebar and you can change its position, but it's something for now.
If you have any trouble logging in to the site in the sidebar, you can log in via a regular tab first and then reload the sidebar.

You can definitely create your own extension that uses a custom app icon and it will work no problem when you "Load unpacked" it in developer mode at the URL

.As for uploading said extension to https://store.gx.me/mods, I'm not sure if there are any restrictions for what studios are allowed to do app icons there or if there are any restrictions for what mods can be tagged with the app-icon tag. For example, I think the mods-2-0 tag is restricted to Opera-provided mods but there are still lots of mod 2.0 mods that aren't tagged as such.
You can keep installing mods form other studios and check at the URL
opera://configure/mods/interface/app_icon
to see if they an app icon. At https://store.gx.me/mods/, maybe sort by last modified so you get newer extensions. You'll still have to skip Opera studio mods though. - Opera GX

Tested in Opera Developer 121.0.5600.0 (installer for it is broken though unless you do a standalone installation) based on Chromium 137 and discarding works. Might have to work to GX is based on 137.

@mariuszlol23 It'd be under "Settings -> Accounts -> Family" in Windows if you want to double check.
Besides that, you can uninstall Opera (do not choose to delete your data when uninstalling), but this time, delete the install folder afterwards. Default location is "C:\Users\yourusername\AppData\Local\Programs\Opera".
Then, delete everything in "C:\Windows\temp" and "C:\Users\yourusername\AppData\Local\temp".
Then download Opera's installer, launch it, click "options", review and adjust everything how you want.
Besides that, you can rename the "Opera Stable" folders in "C:\Users\yourusername\AppData\Roaming\Opera Software" and "C:\Users\yourusername\AppData\Local\Opera Software" to "Opera Stable old" to see if starting with fresh data fixes it.
Besides that, I'd look into security software like Bitdefender, Kasperksy and Eset. They might be interfering. You might have to temporarily uninstall them and not just disable them to test if they're really interfering.
You should probably make sure a test standalone installation of Opera works fine. If not, then there's definitely something on your system interfering with Opera.

There's a good chance it's antivirus software that's causing it. Bitdefender, Kaspersky and Eset for example. You might have to temporarily uninstall them to and not just disable them to test if they're interfering with Opera. You might want to reinstall Opera after uninstalling them too.
