Способ производства консервированного салата, предусматривающий подготовку и резку овощей, включающих морковь, и зелени петрушки, бланширование моркови, их смешивание с добавлением прокаленного растительного масла, соли и кислоты, выдержку в течение 10-15 мин, фасовку, укупорку и стерилизацию, отличающийся тем, что в составе овощей используют свеклу и топинамбур, а в качестве кислоты используют лимонную кислоту, свеклу перед резкой бланшируют, при этом смешивание осуществляют при следующем соотношении компонентов по массе:
