Abstract

504,873. Conching chocolate &c. BURGESS, A. F. (Thomsen, C. Z.) June 25, 1938, No. 18917. [Class 86] Apparatus for conching chocolate &c. comprises a series of rollers over which the mass is led in a thin layer and thence back to the main body of chocolate, the thin layer being treated with air. The main body is mixed in a conch 4 and a layer, the thickness of which is deter. mined by an adjustable scraper 9, is picked up by a roller 10 and passes to further rollers 11, 12, 13, the last being fitted with a scraper 14. Air is admitted to the casing 1 at apertures 2 and passes out through the opening 3. The rollers are driven at different speeds and may be heated to different degrees.
