quic-go added github.com/francoispqt/gojay. Starting with v15.
This added an extra 700Mb to our dependency graph which is too much
for some users.

This is a temporary commit until we can find the right way to solve this

Set logger from factory (fixes pion#35)

Also fall back to default if none is passed by config.
