Description

Add documentation on how to move the data directory of an existing deployment.
This is motivated by a data loss incident due to a lack of understanding of the procedure of how to move the data directory

When moving the data directory of an existing deployment, one needs to be careful to remove the existing containers (`bin/stop` is not enough).

A use case for moving the data directory of an existing deployment is, for example, to move it to a more frequently backed-up location when the user base of the service grows.

P.S. Somehow, when originally creating this pull request via the "edit" functionality directly on Github, it bypassed the pull request template

P.P.S. Since forgetting about step 2 can have such nasty consequences, it may even be worth adding a check in the overleaf startup that warns, if the data directories configured in the config file do not correspond to the ones mounted by the containers.
