When moving the data directory of an existing deployment, one needs to be careful to remove the existing containers (`bin/stop` is not enough). A use case for moving the data directory of an existing deployment is, for example, to move it to a more frequently backed-up location when the user base of the service grows.

P.P.S. Since forgetting about step 2 can have such nasty consequences, it may even be worth adding a check in the overleaf startup that warns, if the data directories configured in the config file do not correspond to the ones mounted by the containers. |

Add documentation on how to move the data directory of an existing deployment.
This is motivated by a data loss incident due to a lack of understanding of the procedure of how to move the data directory
