Updated Vite to version 7.0.0 across all relevant examples and their associated
@vitejs/plugin-reactdependencies (to 5.0.0) for compatibility. Also, added important Node.js and Vitest compatibility notes to the Vite and Vitest documentation guides, respectively.Testing Instructions
